My favourite wrestler of all time is Kane and I know that Glen Jacobs who plays him is a really smart and nice guy so he's a close second place but for me it would have to be Chris Jericho.
The man had two dreams growing up, be a wrestler and be a rock star. He achieved both of them and has also been a hosted TV shows and has two books which are apparently very well written (I haven't read them myself yet). The reason I choose him though is that a lot of good things involving him were heavily influenced by him, which you couldn't say for most wrestlers. The millenium clock for his debut was 100% his idea, his 'best in the world at what I do' gimmick was 100% his idea (I personally loved that gimmick!) and he just has some kind of creative genius within him. It was through watching his DVD that I started to heavily consider becoming a pro-wrestler (haven't started working on it yet before anybody asks
) after finding out his humble entry to the Pro-Wrestling.
The commentators always say that he trained at the 'Hart family dungeon' and that he was trained by Stu Hart, actually he went to what he literally refers to as 'Wrestling camp' one summer, a place where Stu Hart showed up on the first day and not at all after, although 'they did use a textbook he wrote' and him and Lance Storm were the only two guys there who were in good shape, makes the whole thing seem a whole more accessible hearing that than 'The Hart family dungeon' which makes it seem like some kind of place that only people with some serious contacts in the business get to train in.
He also seems like a really nice guy, apparently he was the only person that spoke to Matt Striker when he first joined the WWE, he said he always talks to new guys and gives them advice because he knows how hard it was for him starting out because nobody helped him.
I just think he'd be a great guy to talk to with regards to finding out about gimmicks and how the writers/wrestlers come up with different story-lines, he also has a good passion for the business, there's all kinds of times where he's stayed back after Raw or Smackdown as a face or heel to do something to entertain the fans, here's one example:

Like I said, Kane would be a close second and William Regal would be right up there too, I'd also love to speak to Kurt about his gold medal winning and transition from very high level amateur wrestling to very high level professional wrestling.
