Newbie cat owner has important questions?

I have some questions which I will list below. First I want to describe the cat. She's a 1 year old half persian female, and I've had her for 1 week. I live in an apartment, with no other animals. I will list my questions in order of severity.

Feel free to answer one, or many questions below:

1) She doesnt cover her poop in the litter box. I use Fresh Step with clay. Her poop bombs out the entire apartment because she doesnt cover it with kitty litter. I assume maybe its the kitty litter that she doesnt like or something, but maybe some cats just do this? IDK

2) she doesnt like to be held. She ATTACKS your hand/wrist/arm/face. She's definitely not playing. She made my face bleed and she bites my hand absolutely as hard as she can. Is there anything I can do to get her to stop. I'd like to be able to pick her up.

3) She's a little overly aggressive sometimes. Most of the time shes really, really sweet. she'll come up and sleep on my lap like 5 times a day. She'll sleep next to me. She'll let me pet her for 2 hours straight. But sometimes she'll get vicious when someone is petting her. Sometimes it seems like shes playing, but others, she is definitely trying to hurt you. Is there anything way to make her stop this? It happened while I was typing this. She was sleeping right in front of the laptop and i was gently petting her. She just snapped and started attacking me. My hand is currently bleeding.

4) I live on the 15th floor. Sometimes it looks like she's contemplating jumping out the window. Would a cat jump out a 15th floor window?

It sounds like this cat was now raised by its mother. The mother teaches the babies how to use and cover up in the littler box. I have one cat that is like that. The attacking is her way pf
protecting herself. You can break her of this by continuing to put her in a cage or box the minute she does any type of attacking.

Answer for #2: Depending on where you got her from, she might always react like this. My family adopted a 2 year old cat from a shelter that was rescued. He has anxiety problems due to first living with a person with no other animals, then abruptly being abandoned on the streets and having to always be in fear of crossing the streets and stray dogs etc. He's used to me enough that he lets me hold him a little bit, but if I try to lift him up too quickly he'll get startled and try to jump away from me.

Question and answer for #3: Can she still have babies? My female cat after going through surgery started to get more aggressive with our other cats. So it could be hormonal changes.
