I have a food handlers license for New York State. Just about anyone who works in a resturant or bar in NYC can need to get one to comply with state regs.
Getting the license requires a one week course where the scare the bejezzus out of you. Once you learn how easy it is to pass germs along you don't even want to have a glass of water in a resturant.
But the human system is pretty good at defending itself.
